Procedure
Make a huge starter for the yeast to get everything moving much faster. The 3724 (WLP565) will stall very easily. Mash in with 10qts (2.5gal) at 159F (grain at 70F) and mash at 144F for 90 minutes. Use diammonium phosphate nutrient at the prescribed rate for wine yeast. |
