Used Ommegang yeast for this one. 1 L starter.

Procedure

Mash in @ 122 -> 118F for 15 minutes

Raised temp to 138F with 1000W heater. 138F for 30 minutes.

Raised temp to 150F and maintained for 60 minutes.

 

Used bottling bucket as mash-lauter tun. Sparged with 135F tap water to 5.5 gal.

Fermentation
Primary: 16 days @ 78° F
Secondary: 14 days @ 75° F
